Ok, now that I’ve got your attention - that was a bit clickbait-y. I’m still vegan, I definitely don’t eat eggs. I love chickens and don’t want to eat the product of their ovulation, nor do I want to contribute financially to that industry and what they practice.
I miss eggs sometimes though, especially when I’m at a cafe and want something other than the açai bowl. Well, it’s less missing eggs, more missing an easily accessible savoury breakfast. I had conditions for liking eggs: extremely well cooked and never anything but scrambled. If it had a visible yolk, I’d only be eating the white. I was always getting the “egg ick”. I think that’s our brain telling us we probably shouldn’t be eating them.
So, you’ve already tried my chickpea flour omelette, and you’re wanting something sunny side up. Here’s the solution. I promise you, you’ll never get the egg ick with this one.
VEGAN FRIED EGGS
ingredients (for the white):
50g firm tofu
2 tsp chickpea flour
60 ml water
1 tbsp nutritional yeast
2 tsp corn starch
1/4 tsp salt
for the yolk:
1/4 cup cooked sweet potato
1/4 cup water
1 tbsp olive oil
3 tbsp nutritional yeast
1 tsp garlic powder
Sprinkle of turmeric
1/2 tsp salt
how to:
Simply blend the ingredients for the yolk and the white separately.
Add 1 tbsp oil to a frying pan and heat to medium/high.
When oil is hot, add the whites by pouring into the pan into two seperate spots.
Cook ~3 minutes per side. Once on the second side, add 1 tbsp yolk to the middle and wait another minute until it heats through.
Serve as you would with any fried egg!
Enjoying eggs without the animal cruelty. We love to see it. PS you can add “kala namak” aka black salt for a sulphuric taste, but I’ve always been fine without it. Happy fried-day (sorry) 🍳
I'm so glad to see you continue to post, Arielle. I sometimes attempt to replace eggs, in recipes, however I never ventured replacing them as a whole. Thank for sharing, I'm adding this to my to-cook list!
